Bacon Broccoli Quiche - Emily Bites (1)

This simple Bacon Broccoli Quiche is easy to make and a tasty, satisfying dish for breakfast or brunch. I almost always have eggs, cheddar cheese, bacon, and broccoli on hand, so by adding a pack of frozen pie crusts to my shopping list I’m ready for quiche anytime! I actually adapted this recipe from The Disney Princess Cookbook (affiliate link), which my toddler got for Christmas. She has a blast helping me make it, and we all enjoy the finished product! Even though this quiche was originally made for the Beast, to me it feels like a fancy breakfast. I like to serve it with a side of fruit salad for a complete sweet and savory meal. Not only is this Bacon Broccoli Quiche delicious and incredibly easy to make, each slice is just 164 calories or 5 WW (Weight Watchers) Points! This simple Bacon Broccoli Quiche is easy to make and a tasty, satisfying breakfast or brunch!

Yield: 8 slices

Ingredients

  • 4 slices center cut bacon, (I used Wegmans brand)
  • 9 inch frozen pie crust in a tin, regular not deep-dish (such as Pillsbury Pet-Ritz)
  • 3 ounces 50% reduced fat sharp cheddar cheese, shredded (I use Cabot brand)
  • 1 cup broccoli florets
  • 4 large eggs
  • ¾ cup skim milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Pre-heat the oven to 425 degrees. Line a heavy baking sheet with aluminum foil and set aside.

  • Cook the bacon according to package directions. Allow to drain on paper towels and then chop or crumble into smaller pieces.

  • Place the frozen pie crust on the baking sheet and use strips of aluminum foil to loosely cover the outside edges of the crust. Since the outer edges won’t be covered with filling, you do this so that they won’t brown too quickly.

  • Sprinkle the shredded cheese across the bottom of the pie crust and top with the bacon pieces. Place the broccoli florets in a bowl and cover with a damp paper towel. Place the bowl in the microwave and cook on high for about 90 seconds. Allow to cool for a minute or two and then spread the broccoli florets on top of the other ingredients in the pie crust.

  • Place the eggs, milk, salt and pepper into a mixing bowl and whisk together until beaten. Pour this mixture over the other ingredients in the pie crust.

  • Place the baking sheet with the quiche on it into the oven and bake for 15 minutes at 425. Remove from the oven and reduce the heat to 350 degrees. Remove the strips of aluminum foil from the edges of the pie crust and place back in the oven. Bake for another 25 minutes or until an inserted toothpick comes out clean. Allow to cool for a few minutes before slicing and serving. Cut into 8 slices and serve.

      Thank you! While I’m sure these flavors and ingredients would also taste great as a crustless quiche, this ratio and quantity is specifically intended for a crust.

      I am going to make it without a crust, so we’ll see what happens. May have to alter the baking time so will just be vigilant about checking on it during cooking.

      I do not think the ratio of fillings to egg mixture in this recipe would be ideal without a crust. I have many other egg recipes if you would like to make something without a crust! One of my frittata recipes, maybe?

    I have several quiche recipes I make and I rarely bake the in a pie shell. I have never had a problem. A quick spritz of a spray oil in the pan and they cook well. (I don’t like wasting the calories on something I don’t like the taste of.)

      Yup, I have many egg bakes, frittatas and crustless egg cup recipes! I do not believe that the filling for this specific recipe in the ratios I have here would be ideal without a pie crust, so I am encouraging people to use a different recipe if they like to make something crustless. I have many recipes for that! This one is for a more traditional quiche.

    Will the Pilsbury rolled pie crust that is sold two rolls in a box work? Or do I need a premade crust already in a pan to get the same points?

      I’m fairly certain that kind is more points. I use the frozen ones that come in the pie tin.

    I have the Pillsbury pie crust, how can I put that on a baking sheet, it will get messy. Do I put the pie crust in a pie pan on the baking sheet?

    Yum! Just prepped this to have for my breakfasts for the week! It was super easy and would be great as breakfast with fruit or as lunch with a side soup or salad. I also love how customizable this is: I can use your base recipe and measurements but sub out different veggies/meat/cheeses to mix it up next time. Also, added bonus I learned something from making this: I never knew how easy/quick it was to cook broccoli in the microwave! I’ll be doing this method any time I need steamed broccoli from now on!

    When I put this is the recipe builder on WW, I’m getting that just ONE 1/8 of the crust is 5 points. I bought the Great Value traditional pie crust (9 inch) – it’s not the deep dish style. So, I’m already over the 4 points on blue that this was posted as (and, that’s before cheese and bacon!)
    Did anyone else have this issue? What did I do wrong?

      Hi Felicia!
      I specified all the brands I used to get those points in the recipe builder. Different brands or ingredients can have different nutrition information and can affect the points. If, for example, you used different brands of cheese, bacon, or crust, you could definitely end up with different points. I try to always include the brands I used to help.     I followed the recipe without using aluminum foil. Added turkey bacon instead of pork bacon and dairy free milk. The cheese added nice flavor but I noticed my crust never cooked completely. (which I’m not sure if related to the foil) I made two quiches and definitely needed to cook 10+ extra min.
